Meatless Monday – Black Bean Quick Wraps

Living tiny space with a tiny sink means we try to minimize the number of dishes involved with each meal. The ease of pre-boxed and bagged meals can be mighty tempting, so this Meatless Monday, we’re sharing one of our favorite low-clean-up meals. If you’ve got the motivation, you can soak and use dried black beans, but we often take the lazy cook’s route and use canned. Other than that, all you need is a saute pan and an imagination!

Quick Black Bean Wrap

Olive oil

1 bell pepper (chopped)

1 medium sized onion (chopped)

15 ounces black beans

2 handfuls of fresh corn

Jalapenos (fresh or jarred)

Fresh tomato salsa

Avocado

Your favorite hot sauce

Greek yogurt

Small corn or flour tortillas

Instructions

Warm a saute pan over medium heat. Add a couple swirls of olive oil, and add the chopped peppers and onion, and heat until just soft.

Add black beans, corn, jalapenos. Stir often, and allow heat through. While bean mixture heats, warm tortillas in a 150 degree oven (toaster oven on low works well too!)

When ready, serve bean mixture into a shallow bowl, and set out on the table with salsa, fresh avocado, hot sauce and greek yogurt as optional toppings.

We usually just spoon the beans into the center of the tortilla and fold in half. If you use the smaller tortillas, this = three or four tasty bites!
