Meatless Monday – Grilled Eggplant Sandwiches with Romano-Black Pepper Mayonnaise
Traveling around the country has changed the way we think about preparing meals. Although we have a stove and oven in the RV, we still have to plan meals carefully unless we want to live with the smell (and heat) for many hours after the meal is over. As such, we’ve been grilling…. A LOT! Just because you’re cooking over a hot grill doesn’t mean you’re doomed to eat meat every meal. Here’s a yummy recipe for a veggie sandwich that will minimize dishes and maximize your satisfaction. Add avocado, mushrooms, carrots, or any other fresh veggies you have on hand!
Ingredients
1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
3 tablespoons grated Romano cheese
1 teaspoon lemon juice
1/4 teaspoon coarsely ground black pepper
1 small eggplant*, cut into 1/2-inch-thick slices
4 tablespoons olive oil, divided
4 plum tomatoes
8 slices Italian bread or focaccia
Fresh basil leaves
Directions
1. Combine Hellmann’s® or Best Foods® Real Mayonnaise, cheese, lemon juice and pepper. Season, if desired, with salt; refrigerate.
2. Brush eggplant slices on both sides with 2 tablespoons oil. Season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until slightly charred and tender.
3. Brush tomatoes with remaining 2 tablespoons oil and season, if desired, with salt and black pepper. Grill, turning once, 4 minutes or until charred and slightly softened. Remove and slice into quarters lengthwise.
4. Evenly spread bread with mayonnaise mixture, then top with basil, eggplant and tomatoes.

This sounds so good! Might try a version for lunch with Veganaise and nutritional yeast instead of the mayo and romano, since it looks like we have almost everything this calls for in the fridge!
Just remember to make those veges organic. If you can’t do anything else today for the environment, just eat one organic vege in that meatless sandwich.
What a good idea. Cut meat out of our diet one day a week. It reminds us how green inefficient eating meat is, how much water and grain goes into a pound of meat. (Not to mention the pesticides.) What is more, that grilled eggplant sandwich sounds delicious and like a real winner.
