Meatless Monday – Satay-Style Tofu with Mushrooms
As much as I love the satisfaction and savings of cooking at home, there are some cravings home cooking can’t always fill…like the urge for Asian delivery food. Because Meatless Monday should be a fun, delicious way to eat (and not something that you dread) it’s important to look for ways to incorporate these cravings into a vegetarian diet. I’m a sucker for any Asian dishes with noodles, so here’s one I’m dying to try!
Satay-Style Tofu with Mushrooms
Ingredients
1 cup of boiled noodles,
1 cup powdered raw peanuts
4 dried red chillies (available in Asian stores)
Firm tofu, cut into cubes
1 tsp minced garlic
1 pack of button mushrooms chopped into small pieces
1tsp brown sugar
1/4 cup soy sauce
2 tbsp Rice Vinegar,
1 bunch green onions chopped
Salt to taste
Directions
Fry green onions till still crisp in a saucepan in a little quantity of vegetable oil. Add the mushrooms and cook till soft.
In the meantime grind the raw peanuts and the red chillies in a food processor. Add this mixture to the saucepan along with soya sauce, brown sugar and vinegar.
Cook until well blended.
Add salt to taste. Add the tofu and just heat it a little and then add the noodles and mix it well and serve hot. You may vary the dry chillies to make it more spicy.
Serves 2 – 4 people
