Meatless Monday – Spicy Peach Salsa

We’re staying with family in Tennessee right now, and they have the most wonderful peach tree in the backyard. Purchased as an “ornamental fruit tree” years ago, they never expected to be getting a huge harvest of peaches each summer, and are running out of ideas for how to use this perishable fruit. Today’s peach appetizer idea is a handy way to work more fruit into your diet, as well as a lovely sweet-and-spicy snack when guests are over.

Spicy Peach Salsa

Ingredients

4 ripe peaches, peeled and chopped
1 tomato, chopped
1 bell pepper, seeded and chopped
1 clove garlic, minced
2 T cilantro, chopped
2 T lemon juice
½ to 1 fresh chile, seeded and minced OR ¼ t cayenne pepper
¼ t salt
black pepper

Instructions

Combine all the ingredients, and let sit for at least 10 minutes. Serve with tortilla chips or as a side dish with grilled foods.
