Meatless Monday – Banana Pineapple Sorbet

After a Meatless Monday lunch or dinner, it’s only a matter of minutes before we start to get a hankering for something sweet. Most quick dessert options are full of fat, white sugar, or artificial flavorings that can undo all the good your body’s getting by leaving out the meat! Here’s a delicious sorbet recipe that can be whipped up in minutes to keep you from reaching for that candy bar.

Banana Pineapple Sorbet

2 ripe bananas, sliced and frozen
3 oz pineapple juice
3 oz frozen pineapple juice
2 tablespoon shredded coconut

Place all ingredients in food processor or blender and purée until smooth. Serve immediately.

Tip: Top with some homemade toasted almonds or fresh sliced cherries for an extra fruity upgrade!
