Meatless Monday – Chilled Raw Watermelon Gazpacho

If the dog days of summer are making delivery food seem all too tempting, it’s time to stock up on recipes that are both refreshing and nourishing. Although you might think soup is the last thing to put on a summer menu, chilled soups can be the perfect way to cool down after a long day…and you can find most of the ingredients at a local farmers’ market!

Chilled Raw Watermelon Gazpacho

8 cups seedless watermelon, finely diced
1 local cucumber, peeled, seeded and finely diced
1/2 red bell pepper, finely diced
1/4 cup fresh basil, julienned
3 tbsp champagne vinegar
2 tbsp shallot, minced
2 tbsp really good organic extra-virgin olive oil
3/4 tsp sea salt
1 half avocado, chopped

Instructions

Mix watermelon, cucumber, bell pepper, basil, vinegar, shallot, oil, and salt in a large bowl.

Puree 3 cups of the mixture in a blender or food processor to the desired smoothness.

Chill and garnish with a handful of avocado.
